VINIFICATION AND AGEING
The vinification method used calls for very delicate treatments of the grapes at all stages, in order to bring out all of the grape's fine primary aromas, as well as this typical Vernaccia's qualities of freshness and concentration. 

COLOUR
Pale straw yellow with greenish highlights

BOUQUET
Fine, penetrating and fruity, with delicate green apple notes.

FLAVOUR
Full-flavored and well-balanced; reveals a faint aftertaste of almonds.

SERVING TEMPERATURE
Serving at 10°-12° C (50°F – 54°F).

FOOD MATCHES
Excellent with pasta and risotto dishes; serve with vegetables or any grilled fish. Also recommended as an aperitif.

TYPE OF SOIL
The vineyards lie beneath the historic Abbazia di Monte Oliveto, built in 1340, which faces the town of the hundred towers. The vines rise up from a terrain that has its origin in marine sediments from the Pliocene epoch. The soils are therefore a mixture of yellow sands and clay: they are quite fertile, well-structured and have good drainage.

Cordon Spur.

PLANT DENSITY
3,500 vines per hectare (1,415 per acre). The average age of the vines is 20 years.

YIELD
75 quintals of grapes per hectare.

VINIFICATION AND AGEING
The must – which comes from grapes that have been hand-picked and then given a soft pressing – is fermented in stainless steel in the presence of selected yeasts at a controlled temperature of around 18° C. (64° F.) in order to bring out all the wine’s fruity perfumes and aromas. The wine is then de-vatted and the alcoholic fermentation completed. Maturation last 6 months, partly in stainless steel and partly in barriques.

VINIFICATION AND AGEING
Following crushing and destalking, the juice undergoes a fermentation and maceration process in steel tanks lasting 8-12 days, allowing for extraction of a considerable amount of colour and polyphenolics. Following malolactic fermentation, the wine is aged in oak barrels.

TASTING NOTES
colour: deep, bright with hints of purple.
bouquet: Scents of jammy sour cherry and spices come through on the nose with slight herbaceous and resin notes.
flavour: Dense and fruity, providing a lovely contrast to the energetic freshness. Tannins are soft and the finish long and persistent.

FOOD PAIRINGS
The distinctive fruitiness means this wine is ideal from starter to dessert It pairs well with starters, with sauces, with meat stews and medium- and long-aged cheeses. Also ideal as an aperitif or after dinner.

VINIFICATION AND AGEING
Harvesting time is determined based on the acidity of the grapes and their pH value. Once the solid parts have been separated, the juice is fermented at a controlled temperature of 16° – 18° C. Select yeasts are introduced to bring out the aromas typical of this variety. This is followed by a period of aging on “fine lees” to lock in the aromatics.

TASTING NOTES
colour: bright straw yellow with greenish flecks.
bouquet: a medley of elegant and well-pronounced fruity and floral aromas: pink grapefruit, passion fruit, white peach, hawthorn, green pepper, tomato leaf and sage.
flavour: the palate matches the nose impeccably: ample, with good acidity that gives freshness and fragrance. The finish is intense and persistent.

FOOD PAIRINGS
The elegance of its structure makes it ideal as an aperitif and paired with egg and vegetable appetizers, shellfish starters and white or green asparagus dishes.

VINIFICATION AND AGEING
Grapes are taken to the winery as soon as they are picked for gentle crushing. Fermentation is initiated with select yeasts and proceeds at a controlled temperature of 18° – 20° C in order to retain the wine’s fruitiness and superior organoleptic qualities.

TASTING NOTES
colour: bright straw yellow with a slight coppery tinge.
bouquet: intriguing bouquet that evolves into notes of ripe fruit, Golden Delicious apple and citron rind and into floral notes of acacia and medicinal herbs.
flavour: fresh, juicy palate and mouthfeel. Salty notes make it persistent in the finish.

FOOD PAIRINGS
Excellent as an aperitif. It pairs superbly with delicate appetizers, stuffed pasta and all fish and vegetable dishes.

TYPE OF SOIL
At the Ca’ Bolani estate in the Aquileia DOC zone of Friuli, the soils (called “magredis”), thanks to their alluvial origins, have a similar structure to that of the terrain in the area of Bordeaux: a mixture of sand and clay with layers of gravel. They therefore have an excellent ability to retain and then release to the vines those mineral elements that they require in order to thrive.

TRAINING SYSTEM
Double Guyot.

PLANT DENSITY
5,500 vines per hectare (2,225 per acre). On average, the vines are ten years old.

YIELD
4500 kg of grapes per hectare.

VINIFICATION AND AGEING
The grapes are harvested by hand and carefully selected prior to being placed in traditional vinifi cation tanks, where fermentation take place, as well as maceration on the skins for 15 days. The wine matures for 12 months in Allier oak barriques, followed by at least a further 6 months’ bottle ageing.

VINIFICATION AND AGEING 
The freshly harvested Glera grapes are transferred to the wine making cellar for a soft and delicate pressing. The must is clarified and kept at 0° throughout the year. The fermentation takes place in stainless steel autoclaves applying the Martinotti-Charmat method with the aid of selected yeasts. 

TASTING NOTES
colour: bright and brilliant straw yellow with emerald reflections. 
bouquet: fine and delicate with fruity and white flowers notes. 
flavour: round on the palate with an excellent acidity. Pleasant fruity sensations and a sweet almond final note. 

FOOD PAIRING
Excellent as an aperitif, it is suitable for the whole meal from delicate main courses to fruit desserts.
