VINEYARS
Vineyard on the hills, with slopes of 35%. Vines of over 20 years old trained by the Guyot system. The yield is about 70 ql/ha.

VINIFICATION AND AGEING
The grapes are harvested manually in small 16 kg crates. After soft pressing of the whole grapes with 45% extraction of the first-pressing must, settling takes place for 12 hours at 16°C. Alcoholic fermentation proceeds for about 12 days at 18°C. At the end of this period, the wine matures partly in stainless steel and partly in large oak barrels until the following July after harvest. The second fermentation and ageing sur lies in the bottle extend for at least 48 months, followed by 3 months after disgorgement.

COLOUR 
A delicate straw yellow, typical of Pinot Noir with slight gilded reflections, decorated with soft foam and an extremely fine perlage.

BOUQUET
Wide and complex, reminiscent of bread crust, with both mineral and floral hints of rose and acacia. Fruity notes are typical of the black-berried vine from which it is obtained: small red fruits, such as currants and raspberries, with beautiful notes of citrus and sweet, subtle hints of pastries.

FLAVOUR
Sumptuous and flavourful on the palate with fresh citrusy notes.  A slightly almondy, toasted finish completes the mouthfeel to make it rich and full on the palate.

FOOD MATCHES
An excellent apéritif, it goes well with the finest Italian and international hors d’oeuvre. Because of its structure, it can be paired throughout the meal with risotto and delicate pasta dishes, seafood and sushi, and even meat dishes.

THE VINEYARDS 
The vineyards dedicated to Zìnzula are composed of a layer of fine red soil on a bed of limestone. To obtain a high quality rosé, in this case Negroamaro is cultivated using the same agronomic techniques as those used to produce the finest whites: vigorous leafy canopies that successfully protect the grapes from over-ripening and sunburn, avoiding oxidative effects, high levels of alcohol and excess tannins. In order to produce fullyformed, crunchy bunches by harvest time, it is crucial to ensure the vines obtain the right amount of water during the decisive ripening stage. This careful management of the vineyards forms the basis for a rosé with great acidity, freshness and aromatic subtlety.

VINIFICATION AND AGEING
The Negroamaro used in Zìnzula is harvested in mid-September at the first light of dawn. The so-called ‘lacrima’ or static ‘dripping’ of the must is obtained under the grapes’ own weight in the press, with no maceration whatsoever. This technique allows for the extraction of a very delicate rosy tint and preserves the freshest varietal notes, keeping tannins and skin-related bitter notes to an absolute minimum. The resulting wine ferments in stainless steel tanks and stays on the fine lees for about 4 months, before a brief period of ageing in the bottle.      

TASTING NOTES
colour: soft and delicate, like compact face powder, with very light coppery reflections.
bouquet: ample bouquet, with sophisticated flowery notes of rose hip accompanied by pleasant aromas of black cherry, and a spiciness reminiscent of pink pepper and ginger with the merest hint of turmeric.
flavour: harmony and intense freshness in a slender body, supported by fine acidity and made sinuous by a vibrant, savoury streak. The palate follows through pleasantly, revealing crunchy fruit and closing with a marked mineral finale, teasing the taste buds. 

FOOD PAIRINGS
Zìnzula pairs perfectly with appetizers such as fish crudités, small-fry and vegetables, sautéed mussels and clams, seasonal vegetable flans, and fresh and medium-matured cheeses. Excellent with seafood or vegetable risottos, spaghetti with sea urchins, fish stews and fresh and spicy international dishes such as noodles and pad thai.

VINIFICATION AREA
Sasseo is made with grapes from selected vineyards (40 ha). The grapes are harvested in the first week of September, with some of the berries having over-ripened on the vine. The grapes are then delicately pressed and destemmed and the must ferments in stainless steel tanks at an average temperature of 26°C. 

TASTING  NOTES
colour: deep and dull ruby red.
bouquet: the nose reveals full, intense aromas reminiscent of plums and red fruit jam with sweet spicy notes.
flavour: a wine with considerable body, the palate is enveloping, warm and soft and expresses very ripe fruit, backed by a pleasurable backbone of sweet tannins.

FOOD PAIRINGS
Excellent with full-flavoured first courses, white and red meats either grilled or served with sauces, ideal with roast lamb and matured cheeses but not marbled cheeses.

VINIFICATIO AGEING
Falanghina grapes are harvested at the right level of sugar ripeness and acidity, to obtain a fresh, mineral and savoury base wine. After a period of ageing on the lees of about 3-4 months, the base wine is made sparkling via the charmat method, which enhances the varietal aromas of the vine, yielding intense freshness.

TASTING NOTES
colour: pale straw yellow with greenish reflections. Fine and persistent perlage.
bouquet: hints of apple, white flowers, wild fennel and fresh oregano.
flavour: delicate, balanced and very crisp, with crunchy white fruit notes. 

FOOD PAIRINGS
Ideal as an aperitif. It goes well with seafood appetizers and delicate Mediterranean dishes made with fish.

Rosamaro

The Negroamaro grape must is obtained by a particularly soft pressing, to limit the extraction of colour and tannins from the skins. After the first fermentation at a controlled temperature of 18°C, the wine is made sparkling via the charmat method, which enhances its fruity aromas.

TASTING NOTES
colour: brilliant rosé with fine perlage, enhancing its shine.
bouquet: pleasantly intense and fruity, with notes reminiscent of renet apple, followed by hints of small red fruits.
flavour: on the palate it is soft and smooth-flowing with floral and fruity notes.

FOOD PAIRINGS
Excellent as an aperitif, due its balanced flavour it is ideal with light first courses. It goes well with all seafood as well as fried and raw fish dishes.

Negroamaro

VINIFICATION AND AGEING
The grapes are crushed and gently destemmed. The fermentation takes place in stainless steel at a controlled temperature of 28-30°C for 7 days, followed by maceration on the skins for about 10 days. The wine ages for 12 months in large Slavonian barrels and ages for a further period in the bottle.

TASTING NOTES
colour: deep ruby red.
bouquet: notes of blackberry, cherry and ripe red fruit, followed by a lovely spiciness, with prominent coffee, chocolate and liquorice.
flavour: savoury and rounded, well-balanced and very pleasurable. It stands out for its intensity and persistence. 

FOOD PAIRINGS
Pairs well with grilled red meats, even horse meat, as well as matured, sharp and marbled cheeses.

Fiano

The must ferments in stainless steel at a controlled temperature for about 1 week. This is followed by a 7 days of maceration on the skins, which guarantees complete extraction of the colour, aroma and the polyphenolic substances contained within. The wine ages for about 3 months in steel and for a further period in the bottle.

TASTING NOTES
colour: deep red, heightened by brilliant purple reflections.
bouquet: intense notes of red fruit, and plum and black cherry jam, accompanied by hints of vanilla and cinnamon.
flavour: soft and enveloping on the palate, the flavour is intense and persistent, invigorated by satisfying acidity.

The grapes are subjected to a soft pressing and then to fermentation for 5-6 days at a temperature of 17°C. The wine ages for about 3 months in steel and for a further period in the bottle.

TASTING NOTES
colour: bright straw yellow with slight greenish reflections.
bouquet: a broad bouquet that opens with notes of peach, grapefruit and lemon peel, followed by hints of orange blossom, jasmine and lemon balm.
flavour: a very pleasurable mouthfeel, lively, fresh and intensely aromatic. The fruity and floral notes on the nose follow through perfectly on the palate.

FOOD PAIRINGS
Excellent as an aperitif, it is a white that can pleasantly accompany an entire meal. Particularly suited to dishes made with shellfish, pasta with delicate sauces, fish or grilled white meat.
