Vinification and Maturation
Fermentation takes place in revolving, horizontal vinification tanks at a controlled temperature of between 16° and 18°C. (61°-64°F.). The wine then matures for 12 months in Allier oak barriques in the Berengario cellar at Zonin’s headquarters at Gambellara, and for a further brief period in bottle before release.
