Vinification and Maturation
Manual harvesting was carried out in the third week of September. Fermentation at a temperature of 28°- 30°C. (82°-86°F.) lasted eight days. The wine matured for 12 months in 350-liter (92-gallon) tonneaux of French oak, followed by a further period of fining in the bottle.
ColourBrilliant and extremely intense ruby red.
BouquetFull and persistent with appealing notes of cherries, red fruit and sweet spices.
FlavourRich, encompassing and with a big structure with clean sensations of appealing fruitiness supported by a long finish that caresses the palate.
Serving TemperatureServe at about 18°C. (64°F.).
Ideal with savory stuffed pastas, pasta seasoned with piquant sauces or ragout of hare, stew and game in salmì. Excellent as well with aged Pecorino or herbed cheeses.
