Vinification and Maturation

After gentle pressing of the whole grapes, collected into boxes, with the extraction of 45% of the must flower, static decantation takes place for 12 hours at 16°C. Alcoholic fermentation takes place for 12 days at 18°C and the wine matures sur lie until the July after the harvest. At this point, liqueur de tirage is added for the conversion to sparkling wine, which continues for 48 months until dégorgement and the addition of the liqueur d’expédition to obtain a saccharine residue of 4 g/l.


Pale straw yellow typical of Pinot Nero embellished by a soft sparkle and a very fine perlage that is continuous and persistent.


Ample, recalling bread crusts with hints of both mineral and floral glycine and sambuco. The fruity notes are typical of the black berry vine from which it originates: small red fruits including redcurrants and raspberry, with a pleasant hint of the citru


To the palate it is decisive, fresh with excellent sapidity and end sensations that recall the bouquet.

Food Combinations

Excellent aperitif and well-suited to accompanying good cured meats and starters. Its structure allows it to be drunk throughout the meal, with delicate risottos and pasta dishes, seafood and sushi.
