Vinification and Maturation
After a light pressing of the whole grapes in crates, with the extraction of 45% of the main must, a static decanting is undertaken for 12 hours at 16°C. The alcohol fermentation takes place over 12 days at 18°C and the wine is matured on the lees until the July following the harvest, when liqueur de tirage is added to create the foam. This lasts for about 48 months until the dégorgement takes place alongside the simultaneous addition of the liqueur d’expédition, without any dosage of sugar.
ColourA delicate straw yellow, typical of Pinot Noir with slight gilded reflections, decorated by a soft foam and an extremely fine perlage.
BouquetWide and complex which reminds one of bread crust, with both mineral and floral perceptions. The fruity notes are typical of the black-berried vine which gives origin to little red fruits, such as currants and raspberries and a pleasant reference to citru
FlavourSumptuous on the palate with a vivacious savouriness and pleasantly citrusy freshness. The ending is slightly almondy and toasted, completing a gustatory feeling that makes it particularly embracing.
An excellent aperitif, it accompanies all Italian and international hors d’oevres. Thanks to its structure it can be served throughout an entire meal, with risottos and delicate pasta dishes, seafood and sushi, not to mention meat dishes.
