Vinification and Maturation
The grapes, picked at perfect maturation, are delicately pressed and the must is separated with soft presses. Fermentation begins at a regulated temperature between 18°C -20°C in thermo-conditioned steel tanks.

FlavourA balance between richness and acidity con- fers freshness and drinkability to this strongly structured wine.

It is particularly pleasant with risottos, shell fish main courses and with fresh cheeses.
