Vinification and Maturation
Vinified by traditional methods in order to emphasize its attractive fruitiness, it is then re-fermented to obtain a fragrant, lightly fizzy style.
ColourIntense ruby-red with violet reflections.
BouquetIntensely fruity, with hints of violets, bitter almonds, sour black cherries and plums.
FlavourDry, rounded and savory; slightly pétillant.
Serving TemperatureServe at 14°-16°C. (57°-61°F.), but no warmer.
Excellent with savory tarts, agnolotti, meat-filled ravioli, sausages, roast or stewed white meats, and moderately aged cheeses.ed cheeses.
